- Corrective Action(s): Air temperature should not vary significantly when the door is opened for a short period of time. Discussed with operator - reach in coolers that are used heavily throughout the day should be set lower than 4.0C to compensate for surrounding temperatures when the doors are open.
- All perishable items must be transferred to other working coolers until the unit has been serviced and a follow-up inspection takes place. Only remaining items are: juices, whole fruits, and jello.

- 2) Sanitizer solution in all spray bottles and areas of kitchen found to be in concentrations of less than 200ppm. Sanitizer dispensing unit malfunctioning. Unit is dispensing sanitizer solution at concentrations of less than 200ppm.
- CORRECTED DURING INSPECTION - 200ppm chlorine solution was created upon instruction of EHO. Surfaces re-sanitized with chlorine solution.

- Corrective Action(s): 1) Ensure all surfaces are sanitized prior to the start of the work day. It is evident that rodents are able to climb to counter height therefore staff can not assume the surfaces are in a clean and sanitary condition because they were cleaned and sanitized the previous night. Morning sanitizing of counters should be occurring due to severe rodent infestation.

- 2) Due to the severe rodent infestation it is critical that sanitizer solution is checked daily. Staff mentioned that she had informed Chef of malfunctioning unit however an alternative sanitizer solution was not obtained until directed by EHO. Ensure staff are adequately trained to 1) check sanitizer solution daily with test strips, 2) if machine malfunctions to alert Management, 3) Management to put immediate request to service provider for repairs, 4) Management instruct staff to dump all old sanitizer solution and switch to alternative until such time as sanitizer dispensing unit is repaired.

Seek out Pest Control companies willing to inspect the building and seal holes or hire contractors to take on this task. The problem is not limited to the kitchen and will never be under control until the building has had proper inspections by Pest Control.
