      • Observation (CORRECTED DURING INSPECTION): Wood serving trays are not properly washed after each use. Staff are sanitizing the trays after each use, but washing them with soap only once a week.
      • Corrective Action(s): All utensils and serving equipment must be properly washed and sanitized after each use. Anything that cannot be put into the dishwasher must be manually washed and sanitized.
      • Sanitation plan will be revisted, revisions may be required.

      • Observation: Salad ingredients in the bar cooler were stored with no cover. One bowl of shredded cabbage and 2 inserts of pickled vegetables.

      • Observation (CORRECTED DURING INSPECTION): Observed 2 packages of raw chicken and 1 package of raw prawns thawing in the prep sink without cold running water. Packages were still partially frozen at time of observation.
      • Corrective Action(s): Discussed with staff - thawing foods must remain either under refrigeration OR cold running water up until the point of use. Do not turn off the water early.
      • Staff moved the 3 packages into the walk-in cooler.

      • Observation: Cleaning is required in the following areas:
      • > Dishwashing area - minor food debris under the sink and drain boards.
      • > Cook line - deep frying side has grease and food accumulation under the fryers and between equipment.
      • Corrective Action(s): Clean and sanitize as per your sanitation plan. Removing all food and water sources at the end of the day will help to prevent the presence of pests such as rodents and flies.

      • Observation (CORRECTED DURING INSPECTION): Handsink in the dishwashing area is being used as a surface for storing washed serving trays. Trash bin was also positioned in front of the handsink so that access can only be made from the side which would be blocking the entrance into the kitchen.
      • Corrective Action(s): Do not obstruct any handsinks and relocate the trash bin. The basins must be free and access to the handsinks must be unobstructed at all times to facilitate proper hand hygiene.

      • Observation (CORRECTED DURING INSPECTION): Rice scoop in the server area was stored in room temperature water.
      • Corrective Action(s): Pour out the water and replace with ice, or keep the scoop dry.

      • Observation: All spray bottles being used were unmarked.
