- 1. Personal items, including a water bottle and a mug, were observed on the food processing table behind the vegetable slicer.2. The flour scoop was observed to be stored inside the flour pail.3. Pizza dough was observed to be stored uncovered inside the walk-in cooler.Ensure that 1.Food processing surfaces must be used exclusively for food-related products and activities. Personal items should be stored in designated areas away from all food processing and preparation surfaces to prevent potential contamination and maintain food safety standards.2. Ensure the flour scoop is not stored directly inside the flour pail. Store the scoop in a clean, sanitary, and designated location outside the container to prevent contamination of the flour. Maintain the scoop in a clean condition and protect it from exposure to potential contaminants when not in use.3. Ensure all pizza dough is adequately covered or stored containers or covered in plastic while in the walk-in cooler. Implement routine monitoring to ensure all food items are stored in a protected manner at all times.

A bucket had been placed beneath the unit to collect the leaking water.Ensure the source of the leak is identified and repaired. Remove the bucket once repair have been completed and maintain the AC unit in good working order through regular inspection to prevent future leaks.

- 1. Perforated pizza pans were observed to be visibly dirty, with black greasy buildup present on the surfaces.2. Residual food debris and grease buildup were observed on the surface of the pizza oven and on the pizza oven exhaust fans.Ensure that 1. All pizza pans are thoroughly cleaned and maintained in a sanitary condition after use. Remove grease, carbonized residue, and other buildup through effective cleaning procedures. Any pans that are excessively worn, damaged, or no longer capable of being adequately cleaned and sanitized should be discarded and replaced to prevent contamination and ensure food safety compliance.2. Identified area of the pizza oven is thoroughly cleaned to remove all residual buildup and food debris. Implement regular cleaning and maintenance procedures to keep food-contact and non-food-contact surfaces clean, prevent accumulation of grease and residues, and maintain sanitary operating conditions.
