    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A food-grade sanitizer was not available in the food preparation and service area at the time of inspection. The only available chemical for wiping surfaces was a hydrogen peroxide based disinfectant, which did not have any known food safety claims. A quats sanitizer was prepared and made available in this area during inspection. Ensure a food-grade sanitizer is available in any area where food is being prepared.

      • Test strips for the chlorine dishwasher were not observed.Test strips for the quats sanitizer were heavily discoloured. Acquire suitable test strips to verify sanitizer concentrations. Ensure that sanitizers are being tested on a routine basis to verify that satisfactory concentrations of sanitizer are maintained.

      • The ice machine in the upstairs kitchen had a buildup of debris which would potentially contaminate ice. Clean indicated equipment.
