      • Observation (CORRECTED DURING INSPECTION): Ambient temperature of walk-in cooler was 10C. Temperature logs from this morning indicated that the walk-in cooler was 4C today.
      • Corrective Action(s): All food items were immediately transferred to functioning coolers and freezers. Do not store and potentially hazardous food items in this cooler until adjusted and/or repaired to maintain 4C or below at all times.

      • Corrective Action(s): 1. Ensure all food storage is on shelving and at least 15 cm off the ground. Reorganize storage room to ensure food protection.
      • 2. Open cans can rust or corrode with food in it. Transfer all open canned food to food grade containers, such as metal inserts.
      • Above two items correction required today.
      • 3. A new freezer is needed to prevent food contamination of lid material from falling into food. Correction required in two weeks.
