      • Observation (CORRECTED DURING INSPECTION): Non-food grade food colouring was found on site.
      • Corrective Action(s): Staff immediately discarded the container of food colouring.

      • Observation (CORRECTED DURING INSPECTION): 1. Mildew was observed on the interior of the ice machine.

      • 3. Prep table cutting board observed to be in deteriorating condition (across from cookline).
      • 4. Grease and food residue observed on prep cooler door handles, and inside prep cooler.
      • Corrective Action(s): 1. Discard all ice, clean and sanitize interior of ice machine.
      • 2. Clean and sanitize fruit juice sealing machine. Ensure that fruit juice and any spills are cleaned up immediately to prevent the attraction of fruit flies.
      • 3. Cutting board was cleaned and sanitized during the inspection. Resurface or obtain new prep table cutting board.
      • 4. Clean prep cooler door handles, and clean the interior of prep cooler.

      • Observation (CORRECTED DURING INSPECTION): 1. No sanitizer was available at front or back area.
      • 2. Dishwasher is not in good working order.
      • Corrective Action(s): 1. 200 ppm chlorine sanitizer was prepared during the inspection. Prepare fresh sanitizer solution at the beginning of all operations. Clean and sanitize food prep tables prior to use. Ensure that sanitizer is available at front juice preparation area and in back kitchen area.
      • 2. New dishwasher is available, install dishwasher immediately. Manually wash/rinse, sanitize (100-200 ppm chlorine), and air dry equipment in 2 compartment sink until new dishwasher has been installed.

      • Observation: 1. Rodent droppings were observed along the walls and on shelves in the downstairs storage area, and along the floor in the kitchen.
      • 2. Fruit flies were observed in the downstairs storage area.
      • Corrective Action(s): 1. Remove rodent droppings. Clean and sanitize all affected areas with a bleach sanitizer solution. Deep clean entire facility.
      • 2. Clean and sanitize all containers and food preparation surfaces.
      • 3. Pest control company contract is in place. Continue monitoring for pest activity and following pest control company recommendations. Increase pest control company visits if pest issue persists.

      • 4. Pipe in downstairs storage area is leaking.
      • Corrective Action(s): 1. Install new dishwasher. Manually wash and sanitize all dishes and utensils until new dishwasher has been installed (2 compartment sink warewashing information sheet was provided during the inspection)
      • 2. Discard small prep table, as it is not able to be cleaned.
      • 3. Repair QUATS sanitizer dispenser at 2 compartment sink.
      • 4. Staff stated that plumber will come to repair the leak by next Monday. Staff have placed a bin temporarily under the water leak area. Ensure that the water is discarded every day.

      • Corrective Action(s): 1. Remove rodent droppings. Clean and sanitize all areas listed above with a bleach solution.
      • 2. Contact pest control company to inspect the facility and determine cockroach harborage sites. Apply necessary control measures to eliminate cockroaches - as recommended by pest control company. Continue maintaining facility in a sanitary condition and monitor for pest activity
