      • Observation (CORRECTED DURING INSPECTION): 1) Cooking utensils (scissors, tongs) stored in a container by the grill had food debris on surface. Staff had advised cooking utensils and container were washed through the dishwasher at the end of each day.
      • 2) Two mandolin slicers and a small cutting board had food debris on surface.
      • All above tools were taken to the dishwasher to be washed/sanitized at the time of the inspection.
      • Corrective Action(s): Ensure to have cooking utensils and container rotated to a new set every 2 hours and after each possible contamination as discussed at the time of the inspection. Ensure to have all tools properly washed and sanitized after each use. Remove any tools/equipment that are no longer being used in the facility.

      • Observation (CORRECTED DURING INSPECTION): Two of three labelled sanitizer bottles had 0ppm chlorine measured. Staff was advised to have all prep surface sanitized using the newly prepared solution at the time of the inspection.
      • Corrective Action(s): Ensure to have all food prep surface sanitized after each possible contamination and every 2 hours during operation, in addition to at the end of each day. Add 1/2 tsp of bleach per 1L of water. Do not mix the sanitizer with soap or any other chemicals as discussed at the time of the inspection.

      • Observation (CORRECTED DURING INSPECTION): Hand wash station in back corner of kitchen was blocked with food containers.
      • Corrective Action(s): Keep this area clear at all times to allow staff to wash their hands as needed without having to move containers first.

      • Observation (CORRECTED DURING INSPECTION): Dishwasher was not dispensing sanitizer at start of inspection. Owner was able to prime the line and then 50ppm chlorine was detected. Test strips available on site.
      • Corrective Action(s): Check the dishwasher at least daily to make sure it is functioning properly.

      • Observation: Old mouse droppings found behind chest freezer in front dining area. No other signs of pest activity noted anywhere else in premise. Owner said that they have a pest control company.
      • Corrective Action(s): Clean behind freezer to remove all old droppings and continue watch for any signs of new activity.

      • Observation: Owner stated that only she and one other staff on site have FoodSafe and the other staff's certificate has expired. Owner was not present on site at the start of inspection.
      • Corrective Action(s): Have more staff take the FoodSafe course or retake the course so at least one person has FoodSafe on site at all times.

      • Observation: 1. QUAT concentration measured in all sanitizer bottles measured 400ppm. This may cause chemical contamination of foods if applied on food contact surfaces.
      • 2. Platic bands were stored within food preparation area.
      • 3. Observed thawing of raw chicken under cold running water in a sink and spring rolls were stored next to it. Splashing of water may contaminate spring rolls.
      • Corrective Action(s): 1. Ensure to follow the manufacture's direction for sanitizer used in food service establishment. Ensure to maintain 200ppm QUAT concentration.
      • 2. Re-locate plastic bands to the front area where there is no food handling taking place.
      • 3. Ensure that while thawing raw poultry/meat in the sink, no other food products are stored nearby.

      • Observation (CORRECTED DURING INSPECTION): Rice scoop stored in room temperature water.
      • Corrective Action(s): Store rice scoop in an ice water mixture. Replace the ice water every four hours and sanitize the scoop and container, or when ice melts. Staff put rice scoop in ice water at the time of inspection.

      • Observation (CORRECTED DURING INSPECTION): Back hand wash station near recieving bay door is blocked again with containers of cooling broth. *This is a repeat infraction**
      • Corrective Action(s): All hand wash stations must be keept free and clear of all obstructions to allow and encourage staff to wash their hands as often as needed. Further infractions like this may result in further enforcement such as ticketing. For a violation under this section of the regulation a ticket would be $230 per infraction. Keep this area clear at all times.
