- Raw beef was being cut and prepared on the "clean dishes" side of the dishwasher.Do not handle raw meat on / at the dishwasher. Find a dedicated work surface away from customer dishes & utensils .

- No probe thermometer on site for checking temperature of cooked foods.Obtain a suitable thermometer and use it to ensure food is cooked to required temperature.Use a thermometer to ensure food in hot holding is at required temperature.

- Foods in hot holding measured less than 60 degrees Celsius.Cooked beef measured 47C, cooked chicken measured 46C, cooked pork measured 53C.Water below units only measured 56C.All foods in hot holding must be maintained at 60 degrees Celsius or greater.Inserts containing chicken and beef were double stacked. Do not use two inserts to hold one product. This brings the food farther away from the heat. Products removed from unit and re-heated at time of inspection.Thermostat on holding unit was also turned up at time of inspection.

- A strainer and a set of tongs were stored in the hand wash sink.The paper towel was not fed through the paper towel dispenser.Both issues were addressed at time of inspection.Do not store anything in the hand sink. Ensure paper towel dispenser is set-up properly.
