- Observation (CORRECTED DURING INSPECTION): Samosas were being stored at room temperature. They're purchased precooked, frozen from Wal-mart. Operator takes them out of the freezer and stores them at room temperature for sale. Time was not being monitored.

- Observation (CORRECTED DURING INSPECTION): Pepperoni pizzas were stored at 30 degC. Warmer was turned off. Operator wasn't able to tell me how he was monitoring the times.
- Corrective Action(s): Discard the pizzas. As was made clear prior to pizza being approved for sale, pizzas must be kept in a warmer at or above 60 degC. And if they're to be kept at lower temperatures, there must be a system for monitoring the time and to make sure the pizzas are discarded after 2 hours.

Tank does not fill all three compartments with hot water and so is insufficient.
- 2) Plumbing changes were made without obtaining approval from the city building department. Referred to the city. New equipment can not be approved unless the city approves the installation.
- 3) Perishables have been taken out of the pizza prep cooler because it is not working properly. This area is designed for food prep and your pizza prep cooler is required for the safe operation of this business. Repair cooler.
