- Observation (CORRECTED DURING INSPECTION): Facility has recently added sink & surface sanitizer to their kitchen. Quats is being used to sanitized dishes during manual dishwashing. The red buckets were labeled 'sink & surface sanitizer' but had Quats in them. The spray bottle in the front service area was labeled 'Quats' but had sink & surface sanitizer in it.
- Corrective Action(s): Ensure that sanitizer buckets and spray bottles are labeled with the appropriate sanitizer meant for use.

- Observation: Mice droppings noted on a few food cans in the pantry. Several bags of food had chew marks on them. There's no weather-stripping under the pantry door. There are holes in the ceiling tiles.
- Corrective Action(s): Food was discarded. Clean and sanitize all canned goods. Most of the foods are stored inside bins with lids. Start doing the same with all bagged food items. Seal all ceiling holes. Cover the vent with a mesh as the holes are quite large. Install weather stripping under the pantry door.

- Observation: Line cooler's at 9 degC. This is a repeat infraction. During the last inspection, this cooler was around 6 degC. Manager mentioned that they had recently got it serviced. This is the only line cooler as well.
- Corrective Action(s): All sandwiches and other PHF's were discarded. Move all other items into another cooler. Look into replacing the cooler if it's continually having an issue maintaining temperature.

- Observation (CORRECTED DURING INSPECTION): There was no detectable sanitizer in the 3rd compartment used for dishwashing. The sanitizer bucket at the back station did not have any sanitizer in it. The source had no detectable sanitizer in it. The sanitizer was almost finished and wasn't pulling through. Staff poured it into a smaller jug and 200ppm Quats was measured at the source.
- Corrective Action(s): Ensure staff is checking the sanitizer levels regularly. If the solution being dispensed at the source isn't frothy, it should be checked.

- Observation (CORRECTED DURING INSPECTION): Wiping cloths observed on countertops. Sanitizer spray bottle in the Waitress area did not have any detectable sanitizer in it.
- Corrective Action(s): Ensure staff are storing all wiping cloths in a sanitizer solution. Refresh the spray bottles more frequently. Use your test strips to monitor sanitizer concentrations regularly during the day.

- Observation: Staff did not know when the water filter beside the ice machine was changed last. According to the records on the wall beside the ice machine, they were changed in on Dec. 7, 2023.

- Observation (CORRECTED DURING INSPECTION): Several wiping cloths were noted ontop of counters instead of inside the sanitizer solution in the red buckets.
- Corrective Action(s): Ensure all wiping cloths are stored inside the sanitizer solution.

- Observation: The seal around the base of the walk-in freezer is no longer intact. The freezer is leaking into the dry storage room and the walk-in cooler. Mold was observed along the walls in the dry storage room and the walk-in cooler where the leak is. As per staff, this issue has been ongoing for a while now.
- Corrective Action(s): Clean the mold using bleach solution immediately. Get the leak issue addressed by Oct. 14, 2023. Email me a copy of the work order once the work has been completed.

- Observation (CORRECTED DURING INSPECTION): Chopped vegetables, oranges, cream based sauces, and dipping sauces were at 15C in the line cooler.
- Corrective Action(s): All the items were discarded at the time of the inspection. The line cooler was emptied. Do not store potentially hazardous foods between 4C-60C for more than 2 hours.

Ensure all the parts are dismantled after use (or every 2 hours for continued use) and thoroughly washed and sanitized to prevent the growth of pathogens and toxins that can cause foodborne illness.

- Observation (CORRECTED DURING INSPECTION): A bag of frozen gravy was left at room temperature for thawing. The product was still frozen.
- Corrective Action(s): Staff poured the gravy in a pot for boiling at the time of inspection. Do not thaw food items at room temperature as the surface of the product thaws and warms up faster than the inside - allowing pathogens and toxins to grow that can cause foodborne illness.
