      • Observation (CORRECTED DURING INSPECTION): Taquitos in the blue zone (ready to eat section) or rolling warmer were between 56 and 59 degC. The thermostat on the unit had not been adjusted to the proper setting. If they were reheated to above 74 degC in the "red" zone, they should be well above 60 degC in the "blue" zone.
      • Corrective Action(s): Discard the taquitos and make some fresh ones. Ensure that the setting on the warmer is correct. Reheat foods to 74 degC and then hot-hold above 60 degC for service.

      • Observation: 1) Foods inside the M3 undercounter cooler were at 12 degC.
      • 2) Egg sandwich in the open display cooler was at 11 degC; meat sandwich was at 11.5 deg C.
      • Corrective Action(s): 1) All foods were discarded during inspection: 65 taquitos, 1/2 pizza, 1 smokie, 3 corn dogs, 14 hot dogs.
      • 2) 4 egg sandwiches, 3 pizza subs, 4 wraps from the display cooler

    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: M3 undercounter cooler was at 12 degC. Display cooler was not able to keep sandwiches under 4 degC.
      • Corrective Action(s): Repair/replace the undercounter cooler. Until then, do not store any PHF's in this cooler. Store sandwiches on the shelf closest to the vent and further back as discussed. The temperature at the back of the shelves is acceptable.

      • Corrective Action(s): Recommend having a section for recording reheating temperatures for the hot foods to distinguish between the two temperatures.
