- Observation (CORRECTED DURING INSPECTION): Bacon noted in the warmer at a temperature of 30 degC. Manager indicated that the bacon has a 6 hour hold time, but it wasn't time stamped. Chili was cooking/reheating in the electrical unit, and was supposed to have a 2 hour time stamp. But the last time stamp from a few hours prior hadn't been updated.
- Corrective Action(s): Ensure staff are time stamping foods as required.

- Observation (CORRECTED DURING INSPECTION): Both prep coolers in the front service area are not working. Ice was being used to keep condiments cold, however, in most cases the ice had melted or the inserts were sitting on top of a thin layer of ice. There were no time stamps on the condiments. Condiment temperatures were around 12-18 degC.
- Corrective Action(s): Discard all dairy dressings. Condiments can be kept in the inserts for a maximum of 2 hours after which they must be discarded. Use time stamps to monitor this and store only small amounts of condiments in the inserts.
