    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • QUAT surface sanitizer prepared in wash bucket was measured at 0 ppm. Operator prepared chlorine sanitizer (100ppm) during inspection.- As discussed, ensure that sanitizer concentration is regularly checked, and sanitizer solution is prepared (1/2 tsp per litre) for use at all times for each food handling area.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Layout of the front counter was modified to include food preparation, handling, and customer service. No handwashing sink was provided in the front service area.- Install a dedicated hand sink in the front counter area to ensure proper hand hygiene. - Ensure all hand wash sinks are fully stocked at all times with soap, paper towels, hot and cold running water supply.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Painted wood base below the stationary mixer difficult to clean. Paint was chipping off. - Please repaint for ease of cleaning.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. Back kitchen handwashing sink was not equipped splash guards. A food prep table was directly beside the sink where food mixers were stored.- Ensure to equip the handwashing sink with a splash guard to protect the items on the prep table.2. The door of the walk-in cooler does not seal properly, resulting in a gap and potential compromise of temperature control.- Repair the door to ensure a secure seal.
