      • ***Ongoing Violation***Mouse droppings were noted in electrical panel closet in pizza boxes storage room. Glue boards also observed in this area. Operator has contacted pest control company.- Please clean and sanitize areas contaminated by mice. Install pest control measures and perform regular pest control checks.

      • 1. Food was observed stored on an open metal can in the walk-in cooler at the time of inspection. Operator instructed to transfer contents to a food-grade container.- Operator is to ensure, once canned food-item is opened, food should then be transferred to a food-grade container.2. In the dough preparation area, food containers were not covered. Operator placed covers on the containers immediately.- Cover and protect foods against contamination while in storage

      • 1) Colanders of uncovered, processed green peppers were stored on the 3 comp sink drainboard next to detergent and in front of and under the paper towel dispenser. Store foods in a sanitary manner. Recommend to store and dry inside walk-in cooler after processing.2) Cheese at the pizza prep line was scooped out with a plastic container. Please use utensil with handle and keep handle out of food item.3) Foods and food equipment were stored on a shelf directly next to the mop sink. Please do not store food/food equipment within 5 feet of open mop sink. Recommend to use shelf next to mop sink for chemicals only.4) Bag of flour was stored on the floor. Store foods at least 6 inches off the floor and in a sanitary manner.

Many crates were contaminated by filth from staff walking on crates - remove platform and store pizza boxes on proper shelves.

      • 1) There was an accumulation of old food debris under shelving units in the walk-in cooler. Please clean.2) The ceiling tiles particularly around the air change units in the prep area were dusty. Please clean.
