    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • At the time of inspection, a granulated sugar bag and some gingers were found on the floor of the bulk dry storage room, which exposes them to possible cross contamination.PHI pointed this out to the operator and observed him repack and relocate the items.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • During the inspection, Flour mixed with water was observed sitting on a food preparation surface at 21C. PHI asked the operator about the flour which was estimated to have been made over 4 hours prior. Operator was requested to immediately discard the flour solution and was observed doing the same.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The second handwashing sink located at the rear end of the kitchen had supplies but was obstructed and not readily accessible at the time of inspection.This was discussed with the operator to ensure that this handwash sink is always readily accessible for use at all times.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The weather strip at the bottom of the kitchens rear exterior door appears to have been repaired, for the lower door frame. However, the upper frame does not make a proper seal which may allow for cold air entry or insect. Thus, it is in need of repair.Weather stripping and a door sweep are encouraged for this door to aid in preventing the entry of pests or weather.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The weather strip at the bottom of the kitchens rear exterior door has been damaged and no longer makes a seal with the lower door frame.This condition may allow for pest entry and is in need of repair.Ensure that the door is made to be protected against pest entry.
