    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A few chest freezers were measured at -9°C at the time of inspection. Freezer temperature is inadequate. Please ensure all food that needs to be kept frozen remains frozen while being stored or displayed. Please ensure all frozen products are stored below the honeycomb/load line to allow proper air circulation, as discussed during the inspection and as per facility policy. Please also ensure frozen food products, especially high-risk food products, are maintained at -18°C or colder at all times.

      • The metal trim in the vegetable walk-in cooler was in poor repair. Please repair or replace the affected trim so that surfaces are maintained in good repair, smooth, durable, non-absorbent, and easily cleanable.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1. The indicated food storage and display areas were not maintained in a clean and sanitary condition. The bottom portion of the long glass-door cooler was visibly dirty. The ham display cooler was visibly dirty with liquid accumulation. The bacon storage cooler was visibly dirty. Dust buildup was observed on the top of the egg cooler. Please thoroughly clean the indicated areas and maintain all food storage/display areas in a clean and sanitary condition.2. One of the two public washrooms was not in operation and was marked out of service. The public washroom that remained in use was dirty at the time of inspection. Please repair the out-of-service washroom and ensure all washrooms are maintained in proper working order and in a clean and sanitary condition.

      • Renovations to the public washrooms are currently underway. A follow-up inspection will take place once renovations are completed.

    • 23. Is the facility maintained in a clean and sanitary condition?
      • During the inspection, several areas requiring immediate attention were noted. 1. The glass-door coolers, particularly where the ricotta cheese is stored, were found to be unclean, with visible dairy residue on the glass. 2. The bottoms of the shelves where the Flakkes are stored had accumulated dust and debris. 3. The liners in all reach-in coolers were visibly dirty and need to be changed as often as necessary to maintain cleanliness. 4. In the bacon cooler, the black liners had debris accumulation underneath them. 5. The dairy walk-in cooler was visibly dirty. The ceiling and shelves, where the milk jugs are stored and rolled to the front, showed signs of old debris accumulation.To address these issues, all cooler shelves must be cleaned regularly. If liners are used, they must be changed as often as necessary to maintain sanitary standards. A written cleaning schedule is required, outlining what will be cleaned, how it will be cleaned, the cleaning chemicals to be used, and the staff responsible for each task, as assigning responsibility creates accountability for task completion.Public WashroomsRenovations are scheduled for April of this year, and any concerns related to the public washrooms will be addressed during that time.

A proper dispenser/holder is required to ensure sanitary conditions, as it is unhygienic for individuals to handle the entire roll when retrieving toilet paper. Additionally, the soap dispenser in one of the washrooms was broken and needs to be replaced.

Several flies were observed in the coolers (yogurt/egg) sections. Please clean.4. Please ensure the back rooms are as organized as possible to facilitate cleaning. Please proved a written cleaning schedule for all coolers, and all equipment in your facility. This way, a staff can be designated for cleaning that can be done on a regular basis.
