- 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
- Observation: [1] Observed the large wood (sealed) food contact surface counter had cracks and holes in the surface. This does not meet the requirements of a surface that is smooth, durable, easy to clean, impervious to moisture and non toxic.
- [2] staff bathroom opens into the dishwashing area. This was noted as left open during the inspection. The operator must install a self closing mechanism, this prevents any possible cross contamination risks.
- [3] Observed paint that was beginning to flake from the ceiling of the walk in cooler, this surface must be repaired or replaced to meet the surface conditions.
- Corrective Action(s):
- [1] Operator looking to repairing the surfaces and/or looking into other options such as stainless steel cap over the top. At this time operator will do increased cleaning and sanitizing for this surface and using areas that do not have the cracks or gaps. Using scrapers to clean and sanitize the area with bleach sanitizer solution. Operator to provide timeline after contacting contractors. EHO to follow up.
- [2] For the self closing mechanism this must be installed. Once installed EHO will verify it is functioning.
- [3] Operator to resurface/repair this surface so that it meets the conditions.
- Follow up will be made in 3 weeks regarding this.
