- Corrective Action(s): Staff discarded both inserts and refilled from the walk-in cooler.
- Discussed with staff: do not fill the inserts with more than what can be used within 2 hours.

- Corrective Action(s): Use a sanitizer, either Quaternary Ammonia (200ppm residual) or bleach solution (one ounce bleach per gallon waterconcentration) to wipe down prep table every 2 hours or when contaminated. Foodborne illness causing bacteria can grow inside the grooves in the cutting board, frequent sanitation prevents growth of bacteria.

- Observation (CORRECTED DURING INSPECTION): One soup hot held at 47C. All other foods hot held at 60C or greater.
- Corrective Action(s): Unit turned up at time of inspection. Always ensure hot holding units are pre-heated before placing hot food in them. Soups are heated in microwave before being placed in hot holding units. Re-checked at 67C. According to staff, soup placed in unit <2 hours ago. Temperature logs checked for the last four weeks. Logs consistently filled out and meet minimum required temperatures for soup hot well.
