      • Observation(s): 1. NEW INFRACTION: The interior bottom of the preparation table cooler has condensate water accumulating. The bottoms of all food containers on the interior bottom of this cooler are sitting in water. when these containers are removed from the cooler and placed on a counter, or cutting board, cross contamination of that counter or cutting board will occur. Remove all food containers from the bottom of the cooler until the condensate issue is corrected/repaired. 2. ACTION: The issue creating the accumulation of water on the interior bottom of the preparation table cooler must be corrected right away. Remove all containers, remove the water, and clean and sanitize the bottom of the cooler before containers are returned to the cooler. 3. NEW INFRACTION: All food preparation surfaces and food storage surfaces must be cleaned and sanitized right away. Cleaning and sanitizing of these surfaces must occur each day, and after preparing raw foods on the food contact surfaces. Correct right away. 4. ACTION: A wipe cloth pail with 200 ppm bleach solution is to be kept at each work station (food prep counter) with a wipe cloth, and the food prep surfaces are to be sanitized routinely throughout the day, and after prepping raw meats etc. Change the bleach solution every two hours or when the solution becomes visibly dirty. Alternatively a spray bottle with bleach solution (200 ppm) can be used, and change over each day.

      • Observation(s): 1. NEW INFRACTION: The cleaning and sanitation of the kitchen must be improved right away. The current condition of the kitchen will not be permitted to continue. Staff must increase cleaning and sanitizing duties throughout the day. Correct procedures right away. 2. ACTION: a) Remove all clutter from the kitchen to facilitate cleaning. Remove items from the top of fridges/freezers, food counters and place on organized shelving so that these surfaces can be cleaned and sanitized daily. b) Do not+ store cooking pots on the floor, store pots on shelving in a sanitary manner. c) Clean the outside of the walk-in freezer door (e.g. around the door handle). d) Clean the wall around the 2-compartment sink. e) Remove the dirty cardboard from the kitchen floor (e.g. by the 2-compartment sink) and shelving. do not use cardboard as shelf liner. f) Remove the dirty pail, used for oil storage, from the kitchen. g) Do not store items on white cutting boards (e.g. thawing meat, equipment); this is a way to cross contaminate food preparation surfaces. h) Clean the white residue from the top of the upright freezer in the kitchen. i) The vent hood filters are to be washed weekly, or more often when oil and grease is accumulating on the filters. j) Remove all black build up from the floor against the walls and around/under equipment. Use a degreaser to to clean the kitchen floor. Use a degreaser and cleaner regularly for the floor to maintain the kitchen floor oil/grease free. k) Repair the water leak under/behind the gas woks. At the time of inspection a large amount of water was accumulating on the floor. Repair right away. 3. ACTION: All items above (a-k) must receive immediate attention. Failure to improve and maintain the kitchen in a clean, sanitary and organized condition may result in the facility being closed for a period of time to facilitate cleaning etc.

Correct the organization of the walk-in cooler right away. 2. NEW INFRACTION: Do not store open boxes or open containers of food on the floor in the kitchen or in the walk-in cooler. Correct this right away.

      • Observation(s): • NOT RESOLVED: The dishwasher final rinse water temperature was monitored inside the dishwasher at the rack and only reached a temperature of 65° C. The final rinse water temperature must reach a minimum of 71° C at the rack. Have the dishwasher serviced by a qualified technician, to ensure that all washer cycles are operating properly, and that all temperatures are reached. • NEW: At the time of inspection there was no sanitizer present in a spray bottle or in a wipe cloth pail in the kitchen etc. sanitizer must always be present for staff to disinfect food preparation surfaces etc. throughout the day. Correct right away.

      • Observation(s): • NEW - chicken was not recorded to be at an internal temperature of 60° C in the meat end of hot holding display unit. Keep meat at an internal temperature of 60° C or hotter. A suggestion can be to keep an insert lid over the meat to keep in heat temperature. • NOTE - potentially hazardous foods such as chicken that are not maintained at 60° C or higher in the steam table should be discarded.
      • F1.2A Potentially hazardous foods must be stored or displayed at a temperature of 60 °C (140 °F) or hotter.

      • Observation(s): • NEW - In over an hour it was not observed that any staff had washed their hands before handling food. Hand washing must carried out when going from one task to another. An example would be from handling the cash register and then going to handle food. • NEW - The hand wash sink must not be used for any other purposes other than handwashing. No food preparation is to occur in this sink, and no dirty wares are to be placed or washed in this sink. Change practices right away.

      • Observation(s): • NEW - Food containers were observed to be double stacked in the cooler without a lid on the bottom bowl/container. Do not double stack containers unless there is a lid on each container. Foods in the bottom bowl can become contaminated by the bottom of the upper bowl, or vise versa. A contaminated bowl can and will contaminate food contact surfaces in the kitchen. • NEW - All surfaces in the kitchen require cleaning and disinfection. The clutter in the kitchen prevents the proper routine daily cleaning and disinfection of surfaces.

      • Observation(s): • NEW - At the time of inspection it was difficult to determine if the dishwasher was operating properly with regards to whether or not the wash water in the wash cycle is clean water from the rinse cycle. The water in the reservoir looks very dirty. Is the dishwasher operating properly? Have the dishwasher checked by a dishwasher technician. • NOTE - The overall time of the total dishwashing time was less than specified by the dishwasher manufacturer. (30-40 seconds)

      • Observation(s): • Staff were washing hands while wearing disposable gloves. Disposable gloves must not be washed and put back into service. Gloves must only be used for one specific task and then disposed of. Do not use one pair of gloves while performing more than one task, do not multi-task with the same pair of gloves. Using bare hands with proper hand washing between tasks or different types of foods can be more sanitary than improperly using gloves. Staff were advised of this at the time of inspection. Correct glove/handwashing procedures right away. • Do not store raw meats on top of produce. In coolers all raw meats must be stored on the lowest shelves without other foods under them. Storing raw meats above other foods is a risk for cross contamination of foods. Correct procedures right away.

Adjust the water heater temperature so that the gauge for the dishwasher reads a mnimum of 82 C. correct right away.

      • Observation(s): a) At the time of inspection raw pork in a large open plastic tub was stored on top of a box of broccoli, the tub of pork was also filled with liquid; This type of food storage can lead to cross contamination of foods that will cause food poisoning. All raw meats, raw poultry and and raw seafood must be stored on the lowest shelves in the coolers and must not be stored above any other types of foods. b) All food containers in the coolers must have lids or covers. At the time of inspection a piece of raw pork was found in an open container of chopped garlic. c) At the time of inspection the freezer by the rear door of the kitchen was found to be approximately 0° C, and some of the food products were partially thawed causing meat blood/liquid to be dripping in the freezer (a source of bacterial contamination. d) Items "a, b and c" above are severe infractions that can cause food poisoning. The storage of foods in this restaurant must be improved and the risks of cross contamination of foods must be understood by all staff. If cross contamination risks in this restaurant are not controlled then further enforcement may result, e.g. ticket/fine or closure of restaurant to allow for cleaning and organizing of storage. Cross contamination was also a concern at the January 2016 inspection, improvement in food handling practices is required.
