    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Frozen raw chicken wings were observed stored uncovered in the freezer .Public Health Significance- Storing food uncovered may expose it to environmental contaminants and increase the potential for cross-contamination.
      • Corrective Action: Ensure all food, including frozen raw chicken wings, is adequately covered or stored in appropriate food-grade containers with lids to protect it from contamination during storage.
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Black residue resembling mould was observed on the interior ceiling of the cooler. Public Health Significance-Accumulation of mould-like residue indicates inadequate cleaning and maintenance and may contribute to contamination of food or food-contact surfaces if not properly addressed.
      • Corrective Action: Operator was informed to thoroughly clean and sanitize the affected area and remove all visible residue. The operator indicated that a deep cleaning of the cooler will be conducted to correct the issue.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: The glass washer was using chlorine as a sanitizer; however, the sanitizer concentration measured less than 50 ppm at the time of inspection. Public Health Significance- An inadequate sanitizer concentration may result in ineffective sanitization of glassware, allowing disease-causing micro-organisms to survive and potentially contributing to the transmission of foodborne illness.
      • Corrective Action: Operator to use the mechanical diswasher to sanitize glassware until it is fixed and providing the required sanitizer concentration. The operator indicated that a technician will be coming in to service and repair the glass washer.
