      • Sanitizer bucket with cleaning cloths tested at 0ppm chlorine. Some used cleaning cloths observed on counters.ACTION REQUIRED: ensure sanitizer bucket is changed regularly to maintain concentration of 100ppm chlorine.       • Time as a public health control records appeared to be inaccurate. On the day of inspection, facility had several egg tarts (40), chicken pot pie, wiener buns, bbq pork buns, etc left with only ~1 hour left for sales. Records consistently indicated 0 products were discarded in various categories; however, this was not consistent with the number of products on the shelves at the time of inspection. Facility did not have any customers throughout the duration of the inspection.

      • 1) Some foods in the walk-in cooler ex egg slurry were not covered and stored on the floor. ACTION REQUIRED: Store all foods off the floor and ensure they are covered when in storage.2) Scoops were stored directly in the bulk food product. Some scoops did not have handles. ACTION REQUIRED: ensure all scoops have a handle and are stored in such a way that the handle is not in direct contact with the bulk food.
