- Ice was transported using boxes lined with garbage bags.Do not use garbage bags as they were not constructed with the intention to store food.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Sandwiches were brought in a cooler with no cold source such as ice or ice packs. Sandwiches containing meat and cheese are to be kept refrigerated at all times. The sandwiches had been prepared within 2 hours of the event, and vendors were instructed to put the sandwiches on ice. In the future, as sandwiches are prepared, they are to be immediately placed into refrigeration. They are to be transported with active refrigeration and to be stored at events in refrigeration.
