- Observation: Dishwasher final rinse not engaging. Operator stated he observed it malfunctioned last night but when it was reset the final rinse was operating normally. Utensils have not gone through the dishwasher yet today. Dishwasher was turned off and a closed sign placed on the dishwasher
- Final rinse pressure gauge is displaying 10psi. The manufacturers plate states the final rinse should be 20psi +/- 5 psi. This may be a calibration issue

- Observation (CORRECTED DURING INSPECTION): Quats dispenser at two compartment sink only dispensing 50ppm quats. Spray bottles at concentration of 30ppm as well. Quats concentration is required to be 200ppm to effectively sanitize food contact surfaces and achieve an acceptable reduction in foodborne pathogens.
- Corrective Action(s): Must manually mix quats to the required concentration of 200ppm for washing utensils at the two compartment sink and for all quats sanitizer spray bottles until dispenser is repaired. Ensure that ALL employees are aware.
