- Several observed food equipment (mixer bowls, pots, food containers) were too large to fit into the sink basins of the 2-compartment sink for manual dishwashing.There was also a metal wire-rack equipment on the counter of the sinks, reducing the clearance height of dishwashing sinks.

- Disposable gloves, single use paper towels, prepared food, and soiled pots observed in the white storage truck connected by the structural addition. A handwashing sink was not conveniently accessible to this food preparation space.

- The back side of the mobile food unit had miscellaneousitems being stored (empty jug of cooking oil, milk crates with items inside, metal shelving pieces, plastic bread backets stacked on top of each other, wooden boards and pallets lain on the floor, cleaning equipment).

- Mobile food unit was connected by an unapproved structural addition to a white storage truck. The white storage truck had an opening cut out of its side with uneven steps leading into this opening. The mobile food unit had its rear-side shutter door open into this structural addition which had gaps, holes and unfinished wood surfaces.

Large food equipment items must be washed at a base of operations or other permitted food premises with available capacity for such items (large sink sizes and/or large commercial dishwasher suited for such food equipment).
