      • Observation (CORRECTED DURING INSPECTION): Handwash station in the meat preparation area appear to be dry. Hot water required some time to dispense from the faucet. Paper towel dispenser was difficult to pull down. Employees had gloves on and worked on multiple tasks.
      • Corrective Action(s): Ensure that glove use does not replace handwashing practices. In the next staff meeting/huddle ensure to re-train staff on effective handwashing practices and that gloves must not replace hand hygiene.

      • Observation: Minor house flies observed in the main receiving area. Storage of received goods and sodas currently being stored in this area.

      • Observation: Bakery
      • 1. Small plastic clear storage drawers next to hand sink for storage of piping tips, gloves, equipment:
      • Food debris and grime build up on drawers, inside and on the outside.
      • 2. Sanitizer dispenser tube inside Rinse Sink. Rinse Sink has left over whipping cream.
      • Sanitizer Sink has food debris.
      • 3. Dish drying area: black mesh on drying area. Mesh is a porous surface with high surface area that allows for bacteria/mold growth when continuously wet. Dishware and trays being stored directly on mesh.
      • Back Receiving Area:
      • 1. Snap traps for rodents with food as bait in various corners, underneath produce counter.
      • Corrective Action(s): Bakery
      • 1. Clean all storage drawers inside and out.
      • 2. Ensure sanitizing sink is clean before adding sanitizer and dishes.
      • 3. Remove and discard black mesh.
      • Replace with drying racks.
      • Ensure surface is clean and sanitized before placing cleaned items.

      • Corrective Action(s): Re-organize storage rack and place trays onto the rack. Food contact surfaces need to be protected from contamination and not stored on the ground. Wash and sanitize these racks before use.
