      • Observation (CORRECTED DURING INSPECTION): Cooked black beans on the hot holding unit measured at 46.5C. Beans were cooked less than 2 hours ago.
      • Corrective Action(s): Reheat the beans in the oven to an internal temperature >74C and place on hot holding unit, ensuring a temperature of >60C is reached. Operator moved the black beans into the oven.

      • Observation (CORRECTED DURING INSPECTION): 3 bags of frozen cooked meat and 1 bag of guacamole thawing in bin filled with water.
      • Corrective Action(s): Thaw food in a safe way:
      • - Move frozen food into the refrigerator to thaw slowly
      • - Place frozen food in it's original package or in a clean container under cold running water
      • Never leave frozen food on the counter at room temperature. Operator moved products into prep sink to thaw under cold running water.

      • Observation (CORRECTED DURING INSPECTION): 1. Large batch of cut onions and tomatoes sitting on the prep table counter at 8.9C and 8.7C respectively. Operator indicated that they were taken out 1 hour ago, but was too busy to prepare salsa.
      • 2. Frozen chicken in boxes received 1 hour ago left at room temperature.
      • Operator moved cut onions and tomatoes into walk in cooler and frozen boxes of chicken into stand up freezer. Ensure to place large batches of cut vegetables in the walk in cooler tested at <4C when not being used and potentially hazardous food such as raw meats should always be placed in a refrigeration unit immediately upon receiving.

      • Observation (CORRECTED DURING INSPECTION): 1. Large amounts of whole cooked chicken breast and rice in the small warmer located beside the cashier tested between 52-56C. 2. Display hot holding unit with rice, pulled pork and chicken tested between 54-58C.
      • Operator indicated that all foods were cooked less than 2 hours ago in preparation for the lunch rush. Operator moved the whole cooked chicken breast and rice into working hot holding unit near the oven. Operator added water to the hot holding unit and turned up the temperature dial. All temperatures were tested after 15 minutes and tested to be >60C

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): The third sink (sanitizer) sink in the 3 compartment dishwasher and all sanitizer buckets tested at 50ppm of QUATS solution. The dispenser holding QUATS solution is empty. Operator replaced the dispenser with a new bottle of sanitizer and replaced all sanitizer buckets and the compartment sink. QUATS tested at >200ppm. Ensure to always check the dispenser and sanitizer solution on a regular basis to ensure the correct concentration of sanitizer is being dispensed.
