      • The floors require a repair.
      • Repair the floors where it is broken or pieces are missing. Timelines: Make a plan to repair the floor within 6 months Repair the floor within a year Comments A routine inspection was conducted. A focused inspection was also conducted regarding a complaint received for Bone in Braising Short Ribs which were purchased Sept 22/26 and had a foul odor upon opening. Focused inspection items: - Temperatures were reviewed for receiving, storage, and display coolers. Receiving temperatures are only documented for non-compliance and there were none documented for receiving during this timeframe. The walk in meat cooler was at 2.1°C by IR gun and the display cooler was 4.9°C by ambient probe thermometer. - The coolers are both monitored electronically and provide alarm notification to the store management. No alerts were received in this time. Audit logs are kept with all temperatures within the required range within the timeline of receiving this items. - Storage practices were reviewed to ensure overstocking does not occur. Management inspects practices routinely. All food items in the meat display case appeared to be wholesome and the packaging was intact. - This food item is not packed in this premises and is packed at another location. - No other complaints were noted during this time. Complaints are documented and reported to head office for further investigation. - The store policy on customer handled items (which may be temperature abused) was reviewed. Staff are to check temperatures or when in doubt, discard the item. - No conclusive determination could be made regarding that cause of the spoiled food item. Management is encouraged to review store policies with staff regarding this matter. Action items: * Ensure any rusting on shelves are repaired. * Minor cleaning is required in the coolers under and behind equipment. Comments - QUATs sanitizer available at 200 ppm. - Test strips are available. - All cooler and freezer temperatures are satisfactory. - Hand washing stations are fully stocked with liquid soap and paper towel.
