      • The quaternary ammonium sanitizer (Quats) concentration from the dispenser was measured at 50 ppm. The operator was instructed to manually prepare the sanitizer to achieve a concentration of 200 ppm until the dispenser unit is repaired by maintenance.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Used wiping cloths were observed on prep stations and cutting boards. The operator was instructed to store cleaning cloths in a sanitizer bucket when not in use.

      • Staff personal items, including mobile phones and water bottles, were observed on countertops and cutting boards in the kitchen. The operator was instructed that personal items must not be stored in food handling areas. The operator removed all items upon request.

      • The dishwasher chlorine sanitizer was found to be dispensing at 0 ppm. The operator was advised to manually prepare sanitizer at the required concentration and ensure all dishes are properly sanitized until the equipment is serviced.

      • Neither kitchen staff nor management had food safety certification at the time of inspection. The operator was instructed to obtain the required certification from an approved food safety training organization to ensure compliance.

      • A large bag of shrimp was observed to be stored with the outside of the bag in direct contact with other product. The bag was removed immediately upon request. Ensure food items are stored in a manner that protects from contamination.

      • Quat test strips were observed to be expired. Obtain new quat test strips.

      • Grease build up was observed on the exhaust canopy filters above the grill. Clean the exhaust canopy filters.

      • The gasket for the standup cooler located by the fryers was in disrepair. Repair/replace the gasket.The temperature in the cooler measured 4°C.

      • A bottle of lemon juice, and a bottle lime juice were being stored in customer ice.The bottles were moved and the customers ice that had been contaminated was discarded.

      • Food items were being thawed at room temperature.The items were still frozen and moved to the walk in cooler.Foods are only to be thawed in the following ways:• Placing in the fridge. Store raw meats below any ready-to-eat foods, like fruits and vegetables.• Placing under cold, running water in the sink.• Using a microwave oven. Cook foods immediately after thawing.• Cooking foods from frozen. For example, add frozen vegetables to soup that is cooking.

      • There was an accumulation of food debris on the back blade and guard of the meat slicer.Ensure that all items that are removable are removed, cleaned and sanitized. Ensure that the rest of the slicer is cleaned and sanitized in place.

      • Some of the food container lids were cracked. Removed cracked and damaged utensils and equipment from use.
