- The two containers used for storing the tongs near the front hot holding unit were observed to be in disrepair, with paint chipping on the inside of the containers. Ensure dishes are maintained to be smooth and easy to clean. The operator replaced the indicated containers during the inspection.

- In the dry storage area, keep the food stored above chemicals such as vehicle oil, etc.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The three compartment sink was equipped with detergent however no sanitizer was available. Operator indicated that sanitizer is not used for utensils. Please ensure all reusable items follow the 3 step dishwashing method. They must be washed in hot soapy water, rinse with hot water, and sanitized for a minimum 2 minutes before air drying it. Ensure the applicable test strips are available for verification.
