- After several cycles, the mechanical dishwasher did not reach 71C at the dish level. The unit was connected to detergent. In the interim, manual sanitizing can be conducted. Please repair or replace the mechanical dishwasher.

- Mechanical dishwasher was not reaching 71C as the hot water tank may be set at a lower temperature. The unit was also not connected to detergent at the time of inspection. Please have the unit connected to detergent, and reach a minimum of 71C at the dish level. Two compartment sink had dish detergent and bleach present. QUAT sanitizer would be arriving soon.

- Warm and cold water were present. Please ensure hot water is readily available.
