    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The dishwasher internal temperature is 70C, the same a the hot water supply. A minimum temperature of 72C at the dish level is required. Action shall be taken to repair the dishwasher sanitizing cycle. Dishware shall be rinse in 100ppm chlorine until this issue is resolved.
