    • 02. Is all food in this facility from an approved source and/or properly labelled?
      • Five cartons of uninspected eggs were observed on the bottom shelf of the cooler. These containers were not appropriately labeled with the word “uninspected.” In addition, one flat of 24 eggs and one carton of 12 eggs were observed on another shelf. I was advised that these eggs were purchased from Walmart, and a receipt was requested.I suggested that some of the uninspected eggs may have been transferred into inspected egg cartons, as one egg was observed with what appeared to be feathers present. I was advised that these eggs were from Walmart.As this facility holds a commercial food handling permit, uninspected eggs are not permitted on the premises.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The cooler was observed to have an elevated temperature. Staff adjusted the milk cooler during the inspection, and by the end of the inspection the temperature was only slightly elevated.As discussed, coolers must maintain foods at 4°C or colder. It is recommended that temperature records be maintained to ensure ongoing compliance.

      • Uninspected eggs are not permitted in commercial food establishments. Please remove.Meat was observed in the freezer and I was advised that it was donated by a local farmer. The packages have HMB and no other information. As discussed, meat must come from an approved source; please request a copy of the invoice to confirm it is from an approved source. Also, even if donating meat it must come from an approved source.
