- Observation(s): • At the time of inspection, the chemical dispenser at the triple ware washing sink was not properly dispensing sanitizer; no sanitizer was detectable. Repair right away. • Until the chemical dispenser is properly operating, manually add sanitizer into the sanitizing sink water and sanitizer pails. Test the sanitizer concentration with the quats test strips to ensure that the correct concentration (200ppm) is being maintained in the sanitizing sink. • Inform interior health when the sanitizer dispenser is operating properly.
