- Observation(s): NEW INFRACTION: At the time of inspection the walk-in cooler temperature was not in compliance of the required temperature of 4° C or colder. The ambient temperature of the walk-in cooler and the internal temperature of the foods in the cooler was 12° C to 13° C. The food temperatures being the same elevated temperature as the ambient temperature indicates that the cooler has been operating above 4° C for an extended period of time. Have the walk-in cooler adjusted or repaired so that the foods are maintained at a temperature of 4° C or colder at all times. NOTE: No foods that require refrigeration are to be stored in the walk-in cooler until the cooler is properly adjusted or repaired and maintaining a food temperature of 4° C or colder. Arrange for alternative cooler space in the facility. NOTE: At the time of inspection all of the chicken products, cooked macaroni in the walk-in cooler were discarded. The chicken products in the cooler had been in the cooler as of February 11/24.
