- F1.7 Are foods protected from contamination?
- Observation(s): 1. Raw proteins in one of the stand up refrigerators were being stored on the middle shelf directly above vegetables on the bottom shelf. 2. Raw meat stored in the walk in cooler was observed on the bottom shelf without a lid or plastic wrap covering it from potential contamination.
- F1.7A The operator must ensure that all food on the premises is protected from contamination.
- F1.7B Ready-to-eat foods must be stored in a manner that prevents cross contamination.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): 1. An accumulation of grease and food debris was observed on the fume food and surrounding the stove burners. 2. A significant amount of food scraps were observed underneath and surrounding the racks in the storage room.

- Observation(s): The "banquet room" on the submitted floor plan has now been changed into a storage room containing freezers for potentially hazardous food and for dry storage. This change was made without EHO approval.
