- Observation (CORRECTED DURING INSPECTION): Dishwasher was run six times and only reached 68C at the final rinse. Also observed staff manually emptying some of the water from the dishwasher before running it, suggesting that the dishwasher may not be draining properly.
- Corrective Action(s): Manually sanitize dishes in the sink after being washed in the dishwasher.

- Observation: 1) Significant number of mouse droppings observed on the shelves behind food and food equipment. Owner stated that they did a deep clean and these are new since last inspection.
- 2) Gap between two doors at front observed which is large enough to allow mice into restaurant.
- Corrective Action(s): 1) Remove all items from all the shelves below the counter tops removing all droppings and clean and sanitize all shelves. Also move line cooler away from wall to be able to clean the mouse droppings. Due: Friday April 26, 2024
- Provide a copy of the last pest control report to undersigned inspector.

- Observation (CORRECTED DURING INSPECTION): Significant amount of dried on food debris observed under blade cover of meat slicer when it was removed. Meats that are ready to eat are cut on here and can become contaminated if the meat slicer is not cleaned and sanitized properly and often enough.
- Corrective Action(s): This must be cleaned daily (or at least every four hours if used throughout the day). Meat slicer taken apart and cleaned during inspection.

- Observation (CORRECTED DURING INSPECTION): Dishwasher was on at start of inspection and after being run five times, only reached 69C. This must reach 71C at the dish level to sanitize the dished properly.
- Corrective Action(s): Switch to using single use disposable containers for all customers to reduce the amount of dishes until this is repaired. Call a repair company and have them come in to repair dishwasher as soon as possible. Due: April 19, 2024

- Observation (CORRECTED DURING INSPECTION): Only hand washing station in main kitchen area (next to stove) was covered with cutting board and food in containers. No soap was present
- Corrective Action(s): This hand wash station must be kept clear and fully stocked with liquid soap, paper towel and hot and cold running water at all times.

- Observation (CORRECTED DURING INSPECTION): Several containers of raw meat observed thawing at room temperature on top of chest freezer in old staff washroom (which did not to be in use).

- Observation: Significant number of mouse droppings found at the back of shelves used for food and food container storage. Glue boards observed under equipment, one with a dead mouse on it.

- Observation: Spray bottles with sanitizer had no detectable level of sanitizer in it. Staff said they use bleach but proportion of bleach was too much. Dishwashing sign that was posted above two compartment sink was reviewed.
- Corrective Action(s): Use only 5mL of bleach in a 1L bottle of water. Empty the bottles and replace with a new mixture of bleach and water. Recommend changing this every 2-3 days if it is not used up.

- Observation (CORRECTED DURING INSPECTION): Only dedicated hand washing station in main food area was blocked with cutting board and there was no hand soap available for washing hands.
- Corrective Action(s): Keep this sink clear at all times and also keep liquid soap here so staff can wash their hands whenever they need to.

- Observation: Observed a live mouse go in and out of hole behind the "Suzette's Cafe" cooler. Also observed four dead mice in other parts of the restaurant. Several mouse droppings also observed throughout kitchen on the floor and bottom shelf of some shelving units.
- Corrective Action(s): 1) Deep clean the restaurant (see notes on other violation)
- 2) Plug the hole behind the Suzette's Cafe cooler with a pest proof material
- 3) Have mouse traps set up to remove mice on site.
