- 2. In main kitchen, one of the knife racks had old food debris in the storage unit where blades are stored. Wash and sanitize this storage unit. Ensure blades are properly cleaned before placing it back in the yellow storage rack.

- Corrective Action(s): 200 to 400 ppm Quat sanitizer is required for all sanitizer stations. Test the concentration of sanitizer and log daily when solution is tested. This is a repeat infraction. Staff created new sanitizer solution at 400 ppm Quat at the time of solution.
