      • A full metal pot of cooked food was observed placed on the floor near the garbage bin for cooling. During the inspection, the operator moved the container onto the food preparation table.- All food must be cooled and stored in a sanitary manner, off the floor and away from sources of contamination such as garbage areas.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Raw chicken during preparation was stored at room temperature. Internal temperature measured at 22.4C. Food discarded during inspection.2. Spinach mix in a container measured 6.1 degrees Celsius. Spinach mix stored to cooler during inspection.- Ensure food items are stored out of the danger zone of 4-60 degrees Celsius.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • One container of raw chicken wings was observed thawing under stagnant water in the prep sink. Operator was instructed to place meat in the cooler during inspection.- THAW FROZEN FOOD USING SAFE METHODS: In a cooler at 4°C or below, or under cold running water.
