      • Repair / replace mechanical exhaust fan in washroom and ensure ducted directly outside. Repair and verminproof holes in wall by electrical panel. Dry ingredient bins and packaging on floor below pizza oven observed. Store all food & packaging >= 6in. / 15cm. off of the floor on a cleanable shelf / rack / platform. Perform daily monitoring of dishwasher sanitizer and temperature and keep written records.

      • Top of refrigerated prep. table on right side not holding <=4C in potentially hazardous foods. Section taken out of use and unit must be adjusted / corrected before reuse. Operator to manage issue.

    • 28(2) - OPERATOR FAILING TO HAVE MEMBER OF PERSONNEL WHO HAS SUCCESSFULLY COMPLETED FOOD HYGIENE TRAINING PROGRAM PRESENT WHILE OPERATOR ABSENT FROM FOOD ESTABLISHMENT. If an operator is absent from a food establishment, the operator must ensure that a member of the personnel who has successfully completed a food hygiene training program is present.
      • Maintain foodhandler course certificates on-site for audits. Ensure 1 certified foodhandler for each shift.

A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Sideboard polymer cutting board must be repaired or replaced so smooth, durable, free of cracks & crevices food grade material suitable for usage. Countertop deep fryers must be under exhaust canopy for use. See Fire Authority for any other requirements. Perform cleaning under equipment in dishwashing end of kitchen.
