      • Perform general cleaning under equipment and walls in kitchen and dry storage. Correct detergent feed & function that outcome of clean dishware is achieved. All refuse must be stored in closed & verminproof containers. Have all refuse removed from site and increase frequency that buildups do not occur. All food & packaging must be stored >= 6in. / 15 cm off of the floor (corrected during inspection). Correct function of exhaust fan in staff washroom & ensure ducted outside. Provide toilet paper holder. Keep paper towel inside dispenser (corrected). Correct light over freezer in basement. Provide thermometer for front dairy fridge. Monitor temperatures at least twice daily and keep records.

Agreed top shelf for non potentially hazardous foods (PHF's) only(e.g. baked goods) and will post sign for staff.
