- The rinse of the HTST dishwasher was measured at 55 deg C. Staff claimed to be sanitizing manually but there were no plugs for the dishwashing sinks.Immediately obtain plugs for the sinks so proper sanitising of utensils can be done. Have the dishwasher repaired.
