- Observed untreated cutting board with chipped edges to handle/cut the extra-large pizza (24" diameter pizza). Food contact surfaces, including cutting boards, must be non-porous, smooth, and easily cleanable to prevent contamination.

- 1. The chlorine-based mechanical dishwasher was observed to be in disrepair, with a chlorine leak detected on the floor beneath the unit at the time of inspection. 2. Testing of the dishwasher after operation showed no detectable chlorine sanitizer. Repair or replace the dishwasher. In the meantime, manually wash, rinse, and sanitize all dishes and utensils.
