    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • - Food items are not arranged properly in the walk-in freezer - Ready to cook food is stored next to raw meat. Food items were moved and rearranged. - Food items are processed (soaked noodles, sprouted beans) / kept at room temperature. The food items moved into to the walk-in cooler.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control record not available. Please have a pest control program in place and ensure the record is available for inspection.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • - A mixture of wastewater and oil observed on the floor at the griddle. Please empty and clean the area every day at frequent intervals for safe and sanitary operation of the facility.

    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Outstanding : No food safety record including a written sanitation program is not available onsite at the time of inspection. Please have available a written sanitation program to ensure effective cleaning, sanitizing and disinfection procedures.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • New table top dishwasher added to the facility and is not reaching the sanitizing temperature. Please do not use the dishwasher until it is in good repair. Please follow manual dishwashing procedure. Ensure the concentration of chlorine sanitizer solution is 100PPM.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Outstanding :Written pest control records is not available onsite at the time of inspection. Please conduct pest monitoring activities and have appropirate records.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Black hose is used for running hot water. Please ensure the plumbing is in compliance with the regulation / code.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Outstanding - Non-essential equipment and items unrelated to commercial kitchen were still partly present in the back storage area. As these items clutter areas, collect dust/dirt, and hinder cleaning, they must be removed / rearranged and cleaned.- General cleaning throughout the facility is required.
