      • The in house made buns were not labeled with facility information and proper best before dates. - Label the buns with facility information, contact information, and best before date (DAY/M/Y).
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • 1) Food was stored on floor in the walk-in in freezer. - Store food 6 inches above the ground.2) Mop and mop bucket was stored near the bread rack. - Store the mop and mop bucket away from food.

      • Chemicals (floor cleaners) were stored with food.- Store chemicals away from food.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The facility has a two-compartment sink which is not appropriate for washing rinsing and sanitizing the baking trays.- Either get a bigger sink plumbed in or have smaller baking trays that are the right size to the sink.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A few beetles were observed on the glue traps. - Keep areas clean and have regular pest control operator checks.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The display cooler shelf had tape to keep the shelf together. - Remove the tape and repair the shelf in a way that the shelf is smooth, easily cleanable and non-absorbent to moisture.

      • The vents throughout the facility had dust accumulated.- Clean the vents.

      • The fluorescent lights were missing light covers. Equip the fluorescent lights with light covers to prevent food contamination in the event of breakage.

      • The edge of the countertop in the front retail area and storage room were damaged.Fix the edge of the countertop so that they are smooth, non-absorbent to moisture and easy to clean.

      • 1. The shelving in the aisle areas were untreated raw wood.- Ensure shelves and surfaces are smooth, non-absorbent to moisture and easy to clean.2. Foil was used to line the shelves in the storage area.- Remove the foil.

      • The interior and edges of the ice- machine was accumulated with rust.Clean and sanitize or replace the ice machine.
