- 1. A bottle of quat sanitizer used to sanitize the common areas and food preparation surfaces was observed to have a concentration below 200ppm. **Quat sanitizers must be a minimum of 200ppm and must be prepared according to manufacturer's specifications. 2. Communal sanitizer buckets containing chlorine solution were observed to have a concentration of 0ppm. **A Chlorine solution should have a minimum of 100ppm, and chlorine solutions should be periodically checked with a test strip or replaced to ensure sanitizer strength is appropriate.Operator prepared a new sanitizing solutions and checked the concentration using the correct test strips.

- No time stickers were observed on several items left at room temperature, namely:- A crate of eggs- A tray of bacon -Top inserts containing high-risk food items such as, sliced vegetables and cheese, within the prep table. **High-risk food items must be kept at below 4 degrees Celsius or above 60 degrees Celsius. If using time as a public health control, then a timer or date label must indicate the exact time of preparation and/or the suggested time of usage.The eggs, bacon, and any other high-risk food items that may have been within the danger zone for more than 2 hours were discarded by the operator.
