- Black and Decker oven and microwave, along with general food contact surfaces, were not cleaned and sanitized. Both pieces of equipment had a buildup of food particles. The operator was still in the process of setting up at the time of observation.After approximately 30 minutes, both the equipment and the food contact surfaces were cleaned and sanitized.

- Bleach test strips were tried and not working. The container was broken, and the strips were observed discoloured. Ensure that new and non-expired test strips are obtained.PHI provided a few test strips to use for the event.

- No probe thermometer was available. A probe thermometer must be available when cooking/re-heating/hot holding/cold holding foods to ensure internal temperatures are being hit/maintained. Cooking/ re-heating - 74C or above Hot holding - 60C or above Cold holding - 4C or below
