    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Overall temperatures were all observed to be satisfactory. Hot holding exceeded 60 C and cold storage was observed 4 C or colder. However, there was a section of the produce display cooler that was warm ~8 C (tofu and similar foods in this section). Staff will verify the temperature in 15 minutes and if still elevated will take corrective measures. Unit was coming off a defrost cycle and the other sections were observed at a satisfactory temperature, but this section was elevated. OUTSTANDINGAs discussed, I will come by tomorrow morning before 8:30 am to observe the temperature.

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • I observed a roll of plastic wrap (advised it is used to cover rolling racks) being stored on the bottom of a cart. The plastic had unraveled, and a sheet was touching the floor; please discard this sheet. As discussed, perhaps a wall holder for the roll may work well for easy use and storage.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Please repair the leaking pipe from the dishwashing sinks in the bakery area.Raw wood should be sealed in the back area (surfaces should be smooth and impervious to moisture to facilitate easy cleaning).
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The back food preparation areas could do with a thorough cleaning i.e. floors, top of equipment, ceilings, shelving etc. As discussed, mouse traps belong on the floor against the wall. A trap was observed being stored on a lower shelf in the bakery area; this entire shelf needs to be washed, rinsed and sanitized. Also, I recommend cleaning the outside of the traps as they were observed unclean or replace. The squeegee in the bakery area could do with a cleaning as well. Please remove the lids from the garbage containers in the food preparation area as this can be a source of cross contamination. Garbage should be discarded without having to touch a lid. In the meat area there was a used glove observed on the lid of the garbage container instead of inside of the garbage can.An employee smock, hairnet, hat was observed being stored on a cooking tray; advised the employee was on a break. I recommend a hook as you enter these areas where these items can be stored.

      • I observed a plastic bin with food inside resting on top of the garbage bin.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Overall, the store was observed to be kept in a clean and sanitary manner. However, the bakery/produce area requires some cleaning in the hard-to-reach areas i.e. underneath shelving, racks that hold cookie-sheets, knife rack etc. Also, the ceiling in the dairy walk-in cooler requires cleaning.

    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Bakery DepartmentPlease remove the lid off the garbage can. CORRECTEDAlso, there is water on the floor around the handwash sink. I was advised that the sink is not leaking, but rather the water is a result of splashing when the dishwashing sink is emptied. This needs to be corrected and please send me a picture once completed. OUTSTANDING

      • Bakery DepartmentPlease remove the lid off the garbage can. Also, there is water on the floor around the handwash sink. I was advised that the sink is not leaking, but rather the water is a result of splashing when the dishwashing sink is emptied. This needs to be corrected and please send me a picture once completed.
