      • 6/26. Outstanding. The dishwasher was run through several cycles and the temperature was checked using a probe thermometer. The maximum rinse temperature reached was 69.2C. High temperature dishwasher is not sanitizing. Temperature of final rinse water was less than 71 Deg C. Tests (62.7, 66.0, 68.3, 68.7 & 69.8 Deg C)Ensure dishwasher is repaired and temperature of final rinse water is 71 Deg C or hotter.

      • Pest control monitoring devices have not been set up, but AHS checklist is completed monthly. Ensure mouse traps are set up for monitoring pest activity.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • High temperature dishwasher: temperature gauges are not calibrated and providing accurate reading. Ensure temperature gauges are either repaired or obtain a waterproof temperature with a heat shield to test the final rinse cycle temperature.

      • Storage containers, baking trays and cleaning chemicals were stored next to the furnace. This is a fire hazard. Ensure furnace room is not used for storage purposes.
