- 209 - Food not protected from contamination [s. 12(a)]

- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: Cleaning is required for several areas. Fume hood area both above the vents, and behind the fume hood removable vents has significant grease build up. Cleaning is also required behind the main cooking area to remove food and grease build up that is present. Dry storage areas under the shelving require cleaning as well
- Corrective Action(s): These areas require cleaning today, and also regular scheduled cleaning to remove food debris and grease.
- Violation Score: 15
- 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
- Observation: Floor area in the kitchen near the dishwasher found to be covered in several wooden boards. The grease trap is being replaced and from discussions with the staff, Metro Vancouver has required vents to be installed for the grease trap and it sounds like a follow up inspection is required for the installed grease trap before it can be covered.
- Corrective Action(s): The boards covering the hole are not easily cleanable, and can absorb moisture. This project needs to be completed as soon as possible, given that the main area affected is the dishwashing area where moisture and water is common. Obtain some kind of moisture resistant/slip resistant material to cover the wood boards, such as rubber mats by September 26. I'd like to see this project completed by no later than October 9, 2025. Once the grease trap can be covered, full repair of the floor back to good condition is required. Construction can not occur during operating hours. Ensure that the sink area caulking is also redone once the project is completed.
