- Dairy cooler measured 10°C. This is to warm. Cooler was being used to store milk and juice jugs. Temperature logs showed the cooler operating below 4°C earlier in the day.
- Do not store any potentially hazardous food in the cooler until it has been serviced and can maintain 4°C or less at all times. Correct immediately. Comments Other protective temperatures were in compliance. Dishwasher final rinse temperature measured 74.8°C. In compliance. Ensure the final rinse temperature achieves a minimum of 71°C if measured from the level of the plate or 82°C (180°F) if measured from the gauge. Hand sinks supplied with hot water, soap, and paper towels. Ensure food, such as syrups, are protected from splashing and cross-contamination. Recommended to move syrups away from sink. Chlorine sanitizer measured 100 ppm. In compliance. Ensure sanitizer spray bottles are clearly labelled. Overall cleanliness and sanitation was adequate.
